Coffees from the Chiapas region of Mexico have been in our roastery lineup for years. We continue coming back to them because of their mass appeal and versatility. We are particularly excited for the return of this crop from the farmers of the CESMACH Cooperative. It is balanced, sweet, uncomplicated and just plain delicious. 

We are also proud to again partner with Food 4 Farmers, a Vermont-based nonprofit organization, that has worked with the producers of CESMACH since 2013 on food security projects. As in previous seasons, for every pound of the Chiapas we roast and sell, Brio contributes $1 toward apiary projects at CESMACH. Together with Food 4 Farmers, the Coop identified commercial beekeeping as a key opportunity to build better livelihoods and nutrition. We visited CESMACH a few year back and saw their beekeeping operations first hand. And we got to taste the honey - delicious!

The farms part of the Cooperative are located in the buffer zone of El Triunfo Biosphere Reserve, which is in the highlands of the Sierra Madre. It is one of the most diverse forest reserve areas in the world and contains Meso-America's largest cloud forest, as well as a protected natural environment for thousands of plant and animal species. All of the coffee produced here is shade-grown.
