In Vermont, we are continuously impressed by the creativity, experimentation, and pursuit of quality we see in the people who live here and in the businesses they run. Working in such a place, we are inspired to explore uncharted territories of our own craft. One of our most successful experiments to date has been with barrel aging coffees. We’ve been playing around with combinations of coffee and barrels that work well and complement each other, from gin to whiskey to maple rum. 

Aging coffee in a red wine barrel used by one of the amazing wine producers in Vermont has been a wish for us since we began our barrel-aged series.  We are so thrilled that this finally came to fruition. For this project, we collaborated with Shelburne Vinyard's Iapetus, a Vermont winemaker with a close relationship to the environment and a relentless pursuit of creativity with their wine growing. Iapetus has been (and is) instrumental in developing an appreciation for fine wines of Vermont.

This barrel was used to naturally ferment red wine grapes of the unique TP 1-1-12 variety. We used our Costa Rica Tarrazu washed-process coffee for this project because we wanted a sweet and balanced coffee, with not too much acidity; one that would be neutral enough to take on whatever flavors the barrel had to offer yet provide a solid coffee foundation. The result is even more delicious than we had hoped for!  

The result is a stunning coffee and a unique taste experience. Medium body pairs with the chocolate sweetness with a distinct & clear character of red wine. We were surprised by how much the character obtained from barrel aging this coffee reminded us of naturally processed coffees.

This coffee is perfect for a shot of espresso paired with dessert, or a cozy mid-day brew.
