Colombia is renowned for its coffee, and for good reason! The rich, chocolatey, nutty flavor profile typical to the country is what many of us have come to expect from our morning cup. And, because it grows well in so many different regions, there are new crops being harvested all the time. So it’s safe to say that we have sampled many a Colombian coffee over the years, but we have never found anything from the Department of Cauca that bowled us over…until our virtual trip to origin this past summer that allowed us to find this treasure.
In addition to being an exemplar of that Colombian flavor profile we all know and love, this lot from Dario Manzano and his Villa Soffy (named after his daughter) offers a juicy burst of orange acidity, a refined level of sweetness, and a tantalizing floral hint that is quite rare in Castillo beans.
Dario Manzano is a second generation coffee producer, who grew up helping his father, and has dedicated his own family farm to exclusive produce specialty-grade coffee. The care and knowledge that Dario applies to his craft shines through in every roast!
