The famous Yirgacheffe origin is part of the Southern Nation Nationality and Peoples Region (SNNP) in Ethiopia; however it's considered its own recognized micro-region due to the unique coffee profile produced there. A subtropical climate, high elevations and rich soil yield exquisite and sought after coffees every harvest. This Yirgacheffe is harvested in Kochere, a Woreda that we've sourced beautiful coffee from time and again. Coffees from the region are known for complexity, clarity and intense fruit notes.
On Processing
In collaboration with Israel Degefa, a well known and fondly regarded producer that owns and operates the Bonde Washing Station, this lot was inoculated with a small amount of carefully developed coffee yeasts during the washing process. This is a practice that has been gaining a fair amount of traction in recent years, celebrated for its ability to offset some of the microbial vulnerabilities that are inevitable when processing coffee, while simultaneously amplifying certain positive flavor attributes.
In the Cup
For this coffee, the addition of the yeast adds delicacy and nuance to the flavor profile. It still drinks like a beautiful, classic Yirgacheffe - floral and citrusy, but it’s made even more complex by the addition of yeast. It's tea-like, but with a luxuriously silky mouthfeel. We love preparing this one as a pour over, letting the intense aroma waft up as we brew. In an Aeropress, you'll also be rewarded with a quick brew that showcases this coffee's complexity and intensity of flavors.
