This coffee is fantastically sweet, a characteristic we found across multiple brew methods. Raisin sweetness hits your palate first, followed by a cranberry pop, and a lingering silky finish.
Brew Method
The brew method we are loving is Aeropress (by-pass method). The immersion brew helps to develop a heavier mouthfeel, while finishing with a slow and gentle press retains clarity and accentuates fruity acidity. If you want to amplify the body even further, we recommend trying out the Able Disk (Fine) reusable metal filter.
Origin & Processing
This coffee is produced by the Abakundakawa (meaning 'those who love coffee') cooperative in Gakenge. Along with producing coffee, Abakundakawa builds local infrastructure, focuses on improving quality of life for women in their community, and directs social and environmental projects in the region.
This is a fully washed coffee. Once the cherries have been picked, they are depulped and soaked in a water bath to remove all of the fruit surrounding the seed. The coffee is then dried on raised beds. These steps produce a cup that is clean and complex!
