In the Cup
This is one of those rare coffees that can surprise both casual drinkers and the most experienced coffee tasters. It's light, bright, intensely fruity and complex, while surprisingly clean and crisp. This coffee is as fruity as a natural, but as clean and clear as a washed process coffee...astounding! In the cup, we get lots of tropical fruit (think passionfruit, mango, pineapple) alongside classic fruit notes like strawberry and peach.
Origin & Producer
Finca El Paraiso (Paradise) is a small family farm nestled in the Piendamó municipality of Cauca, Colombia. Diego Bermudez leads their coffee-producing efforts and has been pushing the boundaries of flavor through innovations in production and experimental processing. While the farm also produces prized varietals like Geisha, this coffee is an example of what processing can do to transform the flavor of an otherwise run-of-the-mill varietal.
Diego's "Tropical" is an anaerobically processed lot made up of the farm's workhorse varietals, Castillo and Colombia. Both are high-yielding, disease-resistant trees that can produce very good, but rarely exceptional coffee. For this lot, Diego collaborated with the Santuario Project, a group that works with farmers to develop tailored fermentation techniques, to push the boundaries traditionally associated with these varietals.
The "Tropical" lot underwent two anaerobic fermentations. The first fermentation lasted 28 hours with the coffee in whole cherry form and at a controlled temperature of 19℃. The cherries were then de-pulped and treated to a second fermentation for another 40 hours in mucilage. The Santuario Project advised Diego on a target PH level for the ferment which, when achieved, was arrested by a 'thermal shock' immersion in cold water. This is an extraordinary amount of extra effort, but the results speak for themselves.
