This special offering comes from the Cerro San Luis Micromill in Grecia, Costa Rica. The mill is owned and operated by two sisters, processing coffees from their own farms. Finca el Venado focuses on the production of different varietal lots, including Orange Bourbon, Villa Sarchi, and Maragogype.

This microlot is a yellow-honey processed SL-28 varietal. SL-28 is typically grown in Kenya, producing coffees with complex fruit acidity and relative sweetness. Honey-process, or pulped natural, is a processing method which allows some amount of mucilage from the coffee fruit to remain on the seed throughout the drying process. Honey-process is further differentiated into white, yellow, red, and black honey; usually referring to a small, moderate, or substantial mucilage layer left intact. Yellow honey processed coffees are semi-washed, therefore create a wonderful crisp sweetness without sacrificing a clean taste.
