Anaerobic processing goes above and beyond the more commonly known Natural processing to increase the clarity of flavor, and eliminate the funky notes that may occur in some naturally processed coffees. Anaerobic, meaning oxygen-free, processing involves de-pulping the coffee cherry and sealing it in a water-free air-tight barrel containing the coffee fruit mucilage. This mixture then goes through a fermentation process then the pulped beans are removed and dried on beds. 

The result? A clean and sweet coffee that will wow your palate with fruit and floral notes. Tangy red fruit notes dominate the cup (think raspberry, cherry, pomegranate) paired with a creamy body and honey sweetness.
