The Guatemalan highlands produce some of the best and most distinctively tasting coffees in the world. This coffee is no exception. It is brought to us from the Cooperative La Voz, located in the Western Highlands of Guatemala, home to picturesque volcanoes and beautiful lake Atitlan. La Voz is a cooperatively managed farmer group made up of roughly 161 members who cultivate coffee on small plots (1-2 hectares). It has been certified organic since 1992.
This coffee is cultivated in rich and fertile volcanic soils under a shade canopy that includes many trees native to the region. Typically, ripened cherries are harvested by the family of coop members. They are then sorted by about 61 women members before being manually carried to the communal wet processing mill. The coffee is then fully washed, sun-dried on patios and stored in bags in a cool, well-ventilated area for at least two weeks and often over twelve weeks, prior to being sent to the dry mill for processing.
La Voz takes great pride in its ability to control quality at every step of the production process. In addition, they are involved in various community initiatives. Most recently, the cooperative is working with Cafe Cafe, a health foundation from Italy that focuses on health for the community and its members.
We’ve always been big fans of Guatemalan coffee. With its ample sweetness balanced out with a light citrus acidity, this coffee knocks it out of the park. Enjoy!
