Tasting Notes: Butterscotch, cocoa, sangria

In the Cup
This coffee greets you with a full body and lively acidity. The fruit profile is malic in character, reminiscent of green apple and red grape. Mild bitter cocoa notes balance the acidity nicely. A creamy mouthfeel reminiscent of butterscotch candy lingers in the aftertaste. This makes for an approachable cup, characteristic of washed coffees from this region.
Origin
Grown in the verdant highlands of Cauca, Colombia, this lot comes from a group of smallholder farmers who are members of the CafeNorte cooperative. Cauca’s steep terrain and rich volcanic soils make ideal growing conditions for arabica coffee. This lot was submitted for consideration at the Best of Cauca 2025 auction, an event that spotlights the region’s most compelling offerings. Though it wasn’t selected as a top auction lot, we were impressed by the cup quality and decided to add it to our early 2026 lineup.
