Ethiopia Worka Sakaro - 12 oz.

Another bright, balanced & sweet coffee from Ethiopia! We're so excited to add this to our lineup. This particular region is well known for its quality, bright and juicy coffees, and this one does not disappoint!  It reminds us of lime, citrus (think sweet tangerine), and a little red currant for added complexity and pop.  

This coffee is grown by smallholder producers that deliver their fruit to the Ato Mijane washing station for processing. The washing station was established in 2012 by Ato Mijane – Ato stands for mister. It is located around Sakaro, a village in the Gedeb district, near Worka. The Gedeb region, compared to other Yirgacheffe districts, differs is the state of plantations. The oil is more nutritious and trees look more vital than they do in the northern part of Yirgacheffe.

Ato Mijane and his son, Daniel, who now runs the washing station with his father, have created all the right conditions to produce the best coffee that Yirgacheffe has to offer. They follow a strict quality protocol, which is fairly low-tech but very effective. The smallholders that deliver coffee to the Ato Mijane station are all located in the Worka valley –  most of them on the slopes of mount Rudu (2000+ m.a.s.l.). Daniel and his father have close relationships with their grower-partners whom they support with training and finance; another key strategy to get access to the best cherries. 

The coffee is fermented for 24-48 hour and dried on African beds for about 7-10 days depending on the environment.
