This is a sweet, aromatic coffee with juicy acidity and a creamy body. The intense aromatics are the result of careful fermentation, where all parameters are tightly controlled and monitored, including the temperature of the fermentation and the brix readings along the way. Expect notes of juicy fresh peach up front, layered with elderflower and a smooth cane-sugar sweetness. As the cup opens, caramel and tropical yellow fruit notes emerge.
Origin & Producer
This coffee comes from Finca El Paraíso in Cauca, Colombia, where brothers Diego and Alex Bermúdez are redefining what’s possible in specialty coffee through meticulous and science-based processing. Although not from a coffee background, Diego discovered the world of coffee cultivation while studying Agricultural Business Administration, selling coffee to cooperatives to support his education. After winning first place in a regional coffee competition in 2015, the brothers never looked back, combining science and tradition to create innovative, high quality coffees.
At El Paraíso, Every lot is carefully monitored to highlight the varietal’s natural character, resulting in coffees that are consistently vibrant, clean, and full of personality. The farm’s lush surroundings of plantain, banana, and fruit trees support the health of the soils, which are essential to quality coffee. Pink Bourbon is a varietal known for vibrant fruit notes and clean, crisp acidity. Both the varietal characteristics and El Paraiso's controlled fermentation acumen are on display in this offering.
